After long work in the vineyards to achieve optimal ripeness, the grapes are picked by hand and placed in 20kg boxes.
The wine is fermented at 14°C in 600 litre French oak barrels in a temperature controlled cold chamber.
Aged on their lees “sur lattes” for over 36 months with cork stopper.

Surprising hue which is virtually straw coloured with onion skins highlights. Nose: an unusual aromatic profile, ranging from subtlety to complexity. Palate: very fresh on entry, gaining in body and fine vertical fruit structure over the palate.
